Sometimes it's nice to find inspiration in weird places, so I thought I would share this really easy breakfast with you. I have this quite a lot as I like having a vegetable filled breakfast and this is really quick and easy. This is hardly even worthy of being called a recipe, but I suppose it is comparable to something like Huevos Rancheros (perhaps HR's nerdy British cousin) but without the crucial peppers and chillis.

All you need is:
> 1 Mini courgette (our house is full of these for some reason)
> 5-6 Plum tomatoes
> 1 Red onion
> 1 Egg
> Mixed Italian herbs (optional)
> Toast (optional)

There's only a few steps to making it, and they are:
> Heat a small amount of oil in the pan
> Roughly chop up all your vegetables and add to the pan with, let soften for 4-5 minutes. I also added some mixed italian herbs to mine.
> When softened slightly, push into a mound in the pan and make a well in the middle.
> Carefully crack your egg into the well and place a lid over the top to cook the egg for a few minutes
> Slide onto a plate alongside your toast and dig in, making sure to split your yolk open if you're into that kind of thing :)

Hopefully this is a bit of an inspo if you have any of these bits any bobs lying around. I made this for breakfast one day and didn't get a chance to eat again until six and felt fine all day.
